At the moment, our portfolio offerings from Spain only include a CAVA producer, which is where they produce high quality sparkling wine in the traditional method. Wine is fermented a second time in the bottle, just as it is in Champagne, but at a much lower cost due to the less expensive cost of the fruit in the area of Penedes near Barcelona.
This producer of CAVA has very old vineyard holdings. Of particular note are the 70 year old Xarello vines. We currently offer two wines, a Brut Blanc de Blanc and a Rose.
Brut Blanc de Blanc is made from the traditional varietals of Parallada, Macabeo and Xarello. It is aged on the lees for about 22 months prior to disgorgement and finished with a French dosage.
The Rosť Cava is made from 100% Pinot Noir. The grapes are pressed and skin contact is brief in order to extract the lovely color and fruit essence. The wine displays an alluring cherry and strawberry fruit notes and deep pink color.
